    Sugar-Free Pineapple Pie

    1 cup crushed graham cracker crumbs
    1/4 cup margarine, melted
    1 package (1 ounce) sugar-free instant vanilla pudding mix
    1 cup (8 ounce) fat-free sour cream
    1 can (20 ounce) crushed pineapple in natural juices, drained
    1 packet artifical sweetener

    Recipe



    Combine crumbs and margarine; press into bottom and up the sides of a 9-in. pie plate. Bake at 350º for 8 -10 minutes; cool. In a bowl, combine pudding mix and sour cream; mix well. Stir in pineapple and sweetener. Spread into crust. Chill at least 3 hours.

    Yield:8 servings. Diabetic Exchanges:One serving equals 2 fat, 1 starch, ½ fruit; also, 212 calories, 322 mg sodium, 0 cholesterol, 24 gm carbohydrate, 3 gm protein, 9 gm fat.
