    Summer Squash Slaw

    2 small yellow summer squash, julienne
    2 small zucchini, julienne
    1 small sweet red pepper, julienne
    1/3 c. sliced onion
    3 T. vegetable oil
    2 T. cider or white wine vinegar
    1 T. mayonnaise
    1 tsp. sugar
    1/2 tsp. dill weed
    1/2 tsp. garlic salt
    1/4 tsp. celery salt
    1/4 tsp. pepper

    Recipe



    In a large bowl, combine the first 4 ingredients. In a small bowl, combine the remaining ingredients; mix well. Pour over squash mixture and toss to coat. Cover and refrigerate. Serve with a slotted spoon.

    Nutritional Analysis: One 1/2 cup serving (Prepared with cider vinegar and fat-free mayonnaise) equals 52 calories, 140 mg sodium, 0 cholesterol, 4 gm carbohydrate, 1 gm protein, 4 gm fat.

    Diabetic Exchanges: 1 fat, 1/2 vegetable.
