    1/2 tsp unflavored gelatin
    2 Tbsp cold water
    1 cup water
    1 cup sugar
    2 egg whites beaten stiff
    1/4 tsp salt
    2 squares baking chocolate, melted
    1 tsp vanilla or 1/2 tsp almond extract
    1 cup whipping cream

    Recipe



    Soak gelatin in the 2 Tbsp cold water for 5 minutes
    Boil the 1 cup of water with the 1 cup of sugar until it spends a thread. (about 240 degrees F.)
    Add the dissolved gelatin
    Pour syrup in a fine stream over the egg white, stiffly beaten with the salt
    Keep beating continuously, while adding melted baking chocolate, and add flavoring
    Fold in stiffly whipped cream
    Pour into chilled pan (8x8x2) and freeze without stirring
    Serve in tall parfait glasses garnish with whipped cream and a cherry
    Yields: 4 servings
