    Baked Bananas in Caramel Sauce

    For caramel sauce:
    1/2 cup sugar
    1/2 cup water
    1/2 pint cream (1 cup)


    4 peeled bananas
    1/3 cup soft brown sugar
    1 teaspoon cinnamon
    1 tablespoon butter, cut into six pieces
    3 tablespoons fresh orange juice


    Make caramel sauce by bringing sugar and water to the boil, without stirring, in a heavy-based saucepan over medium heat. Continue boiling until the color turns a golden caramel. Take off the heat immediately and add the cream, holding the saucepan at arm's length to avoid being spattered with the hot liquid. Return to a low heat and stir until smooth. Keep warm but do not boil again.

    Finish by putting bananas in an ovenproof dish/casserole and sprinkle with sugar and cinnamon. Drop butter pieces on top and pour on orange juice. Bake for 15 minutes and serve with the caramel sauce.

    Makes 4 servings.
