    1 quart strawberries, washed and stemmed
    2 TBS fresh squeezed lime juice
    4 TBS honey
    Fresh mint leaves
    A bottle of chilled champagne or non-alcoholic sparkling wine

    Recipe



    Heat the lime juice and the honey until the honey melts. Add 2 or 3 mint leaves. Remove from heat and steep for 5 minutes. Remove the mint. Place strawberries in a bowl. If berries are small, leave them whole. If they are large, half or quarter them. Pour the lime-honey sauce over the strawberries and toss gently to coat. Refrigerate at least 20 minutes. Divide strawberries and the sauce into 4 to 6 dessert dishes. Pour champagne over. Garnish each with a mint leaf and serve.
