    7 1/2 oz. butter cookies
    4 oz. raisins
    3 apples
    4 eggs
    1 3/4 oz. sugar
    1 lemon
    1 tsp. cinnamon
    1 tsp. nutmeg
    2 Tbl. apricot jelly

    Recipe



    1. Soak the raisins in warm water for 5 to 10 minutes.

    2. Peel, core, then finely chop the apples. Place apples in a deep dish and sprinkle with cinnamon,nutneg and lemon juice.

    2. Place cookies in a food processor and chop until they form a fine powder.

    3. Add the eggs one at a time to the chopped cookies. Mix very well then fold in the apple mixture and strained raisins.

    4. Butter and flour a deep molding and pour the mixture in. Make sure there are not any air pockets (or bubbles.)

    5. Place the molding in a pan with hot water and put the pan and the molding in the oven. Bake at 350 degrees for 1 1/2 hours.

    6. Remove from the oven and let it cool.

    7. Dissolve apricot jelly with 2 teaspoons of water. Brush the jelly over the top of the dessert.
