    Guinness Stout Ice Cream

    1 cup Guinness stout (or any stout beer)
    1 cup whole milk
    2 cups cream
    2 ounces glucose syrup
    1 cup sugar
    1 cup egg yolks

    Bring beer, milk, cream, glucose, and sugar to a boil. Drizzle it into the egg yolks while whisking vigorously. Heat to 185 degrees F while stirring constantly. Pour through a fine sieve and chill over an ice bath. When the ice cream base is cold, freeze in an ice cream machine.
