    List of Ingredients




    2 eggs, beaten
    1 C. sugar
    1 tsp. vanilla
    1/4 C. all-purpose unbleached flour
    4 C. diced rhubarb
    whipped cream

    Recipe



    Preheat the oven to 350*F.
    Whisk together the eggs, sugar, vanilla, and flour. Stir in the rhubarb.
    Grease a 1-1/2 quart baking dish and pour in the rhubarb mixture.
    Bake for 40 minutes or until the pudding is firm.
    Serve warm with whipped cream.

    Serves 4.
