1 cup rice (we used raw brown)
2 cups milk or water
1 cup whipping cream, chilled
3/4 cup pure maple syrup
Cook rice in milk or water in double boiler until soft and set aside. (We cooked raw brown rice in water in a pot, not double boiler, for about 45 minutes.)
In a chilled bowl, beat whipping cream until thick and almost stiff. Gradually beat in maple syrup. Blend cream mixture with rice. Place in individual serving dishes and serve warm or set in refrigerator to cool. Serve with thin cream, if desired. Serves 6.
