    Peanut Butter Cup Fudge Brownie Sundae

    1 Package (1 lb. 3 1/2 oz.) Fudge Brownie Mix (use the number of eggs and amount of oil and water specified on the package for a 13 x 9 inch pan)
    3/4 Cup Smooth Peanut Butter
    1/2 Cup Chopped Peanuts
    Vanilla, Chocolate, or Peanut Swirl Chocolate Ice Cream
    Easy Fudge sauce (recipe below) or ready made Fudge or Chocolate Sauce
    Whipped Cream
    Miniature Chocolate Peanut Butter Cups, coarsely chopped

    Preheat oven to the temperature specified on the brownie mix package.

    Line a 13 x 9 inch pan with foil and lightly grease with shortening or spray with cooking oil spray.

    Prepare brownie mix, following directions on the package. Pour brownie batter into the prepared pan.

    Place peanut butter in a microwave safe bowl or glass measuring cup and microwave uncovered on high until easy to pour, about 30 seconds.

    Pour peanut butter over brownie batter in an 'S" shape. Using a knife, swirl the peanut butter through the batter.

    Sprinkle the chopped peanuts evenly over the top of the batter.

    Put the pan in the oven on the middle rack and bake according to package directions or until the brownies start to pull away from the sides, about 30 minutes. (will not be able to do the pick test- pick comes out clean - where the peanut butter has been swirled.)

    Remove from the oven and let cool on wire rack for at least 15 minutes.

    When getting ready to serve:

    Make the Fudge Sauce recipe below and allow to cool.
    When brownies have cooled completely, lift the foil and brownies from the pan and cut into 12 serving size squares.
    Place square of brownie in the center of a dessert plate.
    Top with a generous scoop of ice cream.
    Drizzle the Chocolate Fudge Sauce over the ice cream and brownie.

    Top with whipped cream and some of the coarsely chopped peanut butter cups. Decadent!

    Easy Fudge Sauce
    1/2 Cup Whipping Cream or Heavy Cream
    6 oz. Semi-sweet Chocolate Chips
    1/2 Tsp. Vanilla Extract

    Combine chocolate chips and cream in small saucepan and place over very low heat until chocolate melts, stirring. Remove from heat and stir in vanilla. Set aside to cool.
