    2 eggs
    1/2 c sugar
    1 c flour
    1 tsp baking powder
    1/4 tsp salt
    1 tsp vanilla
    1/3 c melted butter
    1 c currants
    Rum Syrup

    Recipe



    Beat 2 egg whites until fluffy, gradually adding 1/4 c sugar; then beat until stiff.
    In another bowl beat egg yolks with remaining sugar; add all at once to the whites, stirring lightly but well.
    Blend flour, baking powder and salt, fold into egg mixture gently.
    Stir in butter and vanilla. Fold in currants.
    Pour into greased 1 1/2 qt. fluted tube pan.
    Bake 375° for 30 minutes until top feels springy when touched and toothpick inserted in cake come out clean.
    Let stand for 5 minutes.
    Turn out on serving plate.
    Prick with fork then spoon on Rum Syrup.
    Let stand until syrup is absorbed.
    Rum Syrup:

    Simmer 1 c sugar and 11/2 c water for 35 minutes. Stir in 1/2 Cup light or dark rum.
