    Raspberry-Peach Cobbler

    Source of Recipe

    Internet

    List of Ingredients

    1/4 cup brown sugar
    1/4 cup granulated sugar
    1 Tbsp. cornstarch
    1 cup water
    1 Tbsp. lemon juice
3 cups peeled and sliced fresh peaches
    1 cup fresh raspberries

    Topping:
    1/2 cup granulated sugar
    1 cup flour
    1 1/2 tsp. baking powder
    1/4 tsp. salt
    1/2 cup milk
    1/4 cup butter, melted
    2 Tbsp. granulated sugar
    1/4 tsp. nutmeg

In a small saucepan, combine sugar, brown sugar, cornstarch and water. Cook over medium heat, stirring constantly until thick.

Remove from heat and add lemon juice, peaches and raspberries.

Pour the peach mixture into 6 greased oven-proof coffee mugs or tea cups (or a 2 quart glass baking or casserole dish).

In a separate bowl, make the Topping: Mix 1/2 cup sugar, flour, baking powder, and salt. Beat in milk and butter until smooth. Spoon the topping batter over the fruit (it rises and spreads as it bakes). Mix remaining 2 Tbsp. sugar and nutmeg and sprinkle over the batter.

Bake in a preheated oven at 375 degrees for 40-45 minutes. Remove from oven and serve immediately. A large scoop of French Vanilla Ice Cream is a great addition!
