Vanilla Milk Ice Cream

4 eggs, yolks only
1 oz unrefined caster sugar
2 tbsp liquid glucose
1 tbsp water
10 fl oz full cream milk
2 tbsp milk powder
2 tbsp vanilla extract with pods
Warm a bowl and whisk egg and sugar for 5 minutes.
Dissolve glucose and water together.
With motor running add glucose to egg mix. Whip for 5-10 minutes on a low setting.
Heat the milk to just below boiling point and mix in the powdered milk. Add this to the egg mix and slowly bring to the boil mixing continuously. When the mix has reached a consistency to coat the back of a spoon, remove from heat and pass through a sieve.
Add the vanilla extract and churn in an ice cream maker.
