    Creamy Chocolate & Peach Layered Pudding

    1/3 cup sugar
    1/4 cup unsweetened cocoa powder
    3 tablespoons cornstarch
    2 2/3 cups lowfat 2% milk
    1 teaspoon vanilla extract
    Peach Sauce (recipe follows)
    1/3 cup frozen light non-dairy whipped topping, thawed

    Stir together sugar, cocoa and cornstarch in medium saucepan; gradually stir in milk. Cook over medium heat, stirring constantly, until mixture comes to a boil; boil 1 minute.

    Remove from heat; stir in vanilla. Press plastic wrap directly onto surface. Cool completely.

    Meanwhile, prepare Peach Sauce.

    Layer chocolate mixture and Peach Sauce in 6 individual dessert dishes. Cover; refrigerate until cold.

    Serve with dollop of whipped topping. Garnish as desired.

    PEACH SAUCE:

    1 1/2 cups fresh peach slices
    1 tablespoon sugar
    1/4 cup water
    1 1/2 teaspoons cornstarch

    Place 1 1/2 cups fresh peach slices and 1 tablespoon sugar in blender container. Cover; blend until smooth.

    Stir together 1/4 cup water and 1 1/2 teaspoons cornstarch in medium microwave-safe bowl until smooth.

    Add peach mixture; stir.

    Microwave at HIGH (100%) 2 1/2 to 3 minutes or until mixture boils, stirring after each minute. Cool completely.

    Makes about 1 1/3 cups sauce
