3 1/2 Cups flour (may use up to 4)
2 pkg dry yeast
1 Cup milk
1/3 Cup sugar
1/3 Cup crisco
1 Teaspoon salt
2 eggs

FOR EXTRA LIGHT DOUGHNUTS:
Dissolve yeast & 1 teaspoon sugar in 1/2 cup warm water before adding to batter.
In large mixer bowl, combine 2 1/2 cups of the flour and the yeast. In saucepan, heat together milk, sugar, the 1/3 cup Crisco, and the salt just until warm; stir to melt Crisco. Add to dry ingredients, add eggs. beat at low speed of electric mixer for 1/2 minutes; scrape sides of bowl constantly. Beat at high speed 3 minutes. By hand, stir in enough of the remaining flour to make a moderately soft dough. Place in greased bowl; turn once to grease surface. Cover; chill 3 to 24 hours. Punch down. Turn out on lightly floured surface; roll 3/8" thick. Cut in squares. Place on greased baking sheet. Let rise until light, 30 to 40 minutes. Fry in deep Crisco heated to 375 for 1 1/2 minutes each side. Drain on paper towel. While warm, roll in sugar.
FOR JELLY DOUGHNUTS
Cut into 3 inch rounds with a cookie cutter or a glass. Let rise about 30 minutes. Fry as above. Cool. Cut a slit into the center of each doughnut, fill with 1 teaspoon jam, jelly, or apple or prune butter. Dust with powdered sugar.
