    Lemon Pastry
    1 ½ cups flour
    ½ teaspoon salt
    ¼ cup ice water
    9 tablespoons butter or margarine
    1 rounded teaspoon shortening
    1 tablespoon fresh lemon juice
    1 teaspoon grated lemon rind

    Combine all ingredients in food processor or with pastry blender. Form a ball and roll out on lightly floured board. Place in pie or quiche pan and bake for 10 minutes at 450 degrees preheated oven.

    Filling

    6 strips of lean bacon, cut into ½-inch pieces
    1 medium onion, chopped
    1 clove garlic, minced
    1 ½ cups shredded Gruyere or Swiss cheese
    ¼ cup grated Parmesan cheese
    4 eggs, lightly beaten
    2 cups sour cream
    ¼ teaspoon nutmeg
    Salt and pepper

    Fry bacon until crisp. Remove bacon and sauté onion and garlic in drippings. Drain and mix with bacon. Combine cheese, eggs, sour cream, nutmeg, salt, and pepper. Spread half the bacon mixture in bottom of pastry shell. Pour in cheese mixture and top with remaining bacon. Bake for 30 minutes at 350 degrees. Can be set aside for several hours and reheated for 20 minutes or serve immediately.
