    Pre-baked pie shell
    4 slices crumbled bacon
    ½ cup minced onion
    2 tablespoons olive oil
    1 ½ cups cooked cubed turkey
    1 ¼ cup half and half
    2 extra large eggs
    ¼ cup sour cream
    2 tablespoons fresh snipped chives
    Grape tomatoes
    Salt and Pepper to taste

    On bottom of pre-baked pie shell: Put 4 slices crisp, cooked and crumbled bacon and ½ generous cup shredded Jarlsberg cheese on bottom of crust. Saute ½ generous cup minced onions in 2 tablespoon olive oil. Stir in 1 ½ cups cooked cubed turkey. Put on bottom of unbaked 9-inch pie shell over bacon and cheese.

    Make custard: 1 ¼ cup of half and half, 2 extra-large eggs, ¼ cup sour cream, 2 tablespoons snipped fresh chives and salt and pepper. Pour over turkey mixture and place 8 to 12 uncut grape tomatoes around the outer edge, then scatter another ½ cup cheese over the center. Bake at 375° F for 40 minutes or until filling is set and a knife insert near the center comes out clean. Let cool for about 10 minutes before cutting into wedges, garnished with fresh chives.

    This may be made early in the day and reheated in a 350° oven. Serve hot or warm.
