    lb ground beef
    2 Tbsp olive oil
    1 clove garlic, mashed
    Salt and pepper
    ½ cup chopped celery
    1 medium onion, chopped
    ¼ cup fresh chopped parsley
    1 tsp dill weed
    ¼ cup rice
    2 fresh tomatoes, peeled or
    1 can (15 oz.) whole tomatoes
    8 green bell peppers
    ½ cup tomato paste
    2 cups water
    2 Tbsp olive oil
    Pinch dried dill weed
    Pinch dried parsley
    Salt and pepper, to taste

    Wash green peppers; cut off tops (reserve), remove seeds and place upside down to drain on paper towels. Sautá ground beef in olive oil; add garlic, salt, pepper, celery, onion, parsley and dill weed. Cook mixture for 5 minutes. Add rice and stir well. Remove from heat. Place peppers in shallow baking pan. Fill each pepper almost full with meat mixture. Set aside. Prepare sauce. In saucepan mix tomato paste and water; add oil, dill weed, parsley, salt and pepper. Cook over medium heat for 5 minutes. Pour sauce over peppers and into baking pan. Replace tops . Bake at 400°F for 20 minutes. Reduce heat to 350°F; bake 1 hour or until rice is done.
