    Pan De Elote con Pollo al Chipotle

    Serves 4

    2 oz. canned sweet corn
    2 tbsp flour
    1 egg
    ½ c. milk
    1 8 oz. chicken breast
    1 c. chopped white onions
    1 touch of garlic
    1 tbsp chili chipotle in adobo
    1 c. diced fresh tomatoes
    1 tbsp sour cream
    salt and pepper to taste
    corn oil for frying

    Recipe



    1. Place all corn bread ingredients in blender and mix.

    2. Using a quarter cup, measure corn bread mix and fry individual corn bread rounds in heavy skillet, turning once.

    3. Cook the chicken breast in water and shred.

    4. Chop the onion with the garlic very fine, sautee in a pan with the corn oil and add shredded chicken.

    5. Before it changes color, add mashed chipotle chilis and tomatoes.

    6. Simmer for five minutes to incorporate flavors.

    7. Add tbsp of sour cream to thicken.

    8. Portion a large tbsp of chicken mix and place on each corn bread round.
