    8 oz. Ahi tuna, "Sashimi" grade, diced
    1 tbsp. green onions, sliced thin on bias
    1 oz. Poki Dressing
    2 tbsp. Seaweed Salad

    Garnishes:
    Wasabi
    Crispy Lotus Roots
    Chives
    Black & White Sesame Seeds

    Working on a extremely clean surface, dice Tuna into 1/8" by 1/8" dice. Place in a non reactive bowl over ice. Fold into tuna green onions, seaweed salad, & poki dressing. Stack tuna mixture on crispy lotus root chips, and garnish with remaining ingredients.

    Ahi Poki Dressing
    1/4 cup Sesame Oil
    1/4 cup Lite Soy Sauce
    1 tbsp. Fresh Grated Ginger
    1 tspn. Chili Paste (sambal)
    Combine all ingredients in a blender. Process 1 minute, reserve and refrigerate.
