    4 pounds of fresh catfish
    Salt and pepper to season
    1/4 cup of bacon drippings or lard
    The juice from 1 lemon
    1/4 cup of chopped parsley

    Clean and skin catfish and pat dry. Sprinkle with salt and pepper. Sauté in hot bacon drippings over moderate heat until browned on both sides. drain the fish on paper towels and place on a hot serving dish. Sprinkle with lemon juice and parsley. Makes 4 servings
