    24 fresh oysters, shucked, half of shells reserved
    6 slices of bacon, cut into 1 inch pieces
    1/2 cup of mayonnaise
    1 cup of butter- flavored cracker crumbs, crushed
    2 tablespoons of dehydrated chives
    1 tablespoon of hot pepper sauce
    1/2 teaspoon of Dijon mustard
    1 teaspoon of lemon juice
    1/4 cup of grated Parmesan cheese

    Preheat your oven to 400ºF. In a 10 inch skillet, cook the bacon until limp. Set it aside. In a small bowl, combine the remaining ingredients except the Parmesan cheese and mix well. Pour 1/2 inch of coarse salt into baking pan. Arrange the oysters, each in half shell, on salt until they sit firmly. Top each oyster with crumb mixture. Sprinkle with Parmesan cheese and place one piece of bacon on top. Bake at 400ºF. for 8 to 10 minutes or until the oysters are hot and tender. Makes 4 to 6 servings
