Baked Bluefish

2 pounds of thick bluefish
4 tablespoons of melted butter
2-4 fresh tomatoes, depending on size
1 teaspoon of sugar
1 large sweet white onion
1/4 teaspoon of salt
1/8 teaspoon of pepper
1/2 cup of heavy cream
Place fish, skin side down, in a foil-lined baking dish. Pour melted butter over it. Arrange tomato slices on top and then sprinkle with sugar. Put onion slices over the tomatoes. Sprinkle with salt and pepper. Cover with the cream. Bake at 375ºF. for 25-30 minutes. Serves 4. Recipe
