Baked Halibut with Tomato-Olive Sauce

1 pound halibut cut into 4 pieces
1 Tbsp. olive oil
1 onion, finely chopped
2 or 3 cloves garlic, minced
4 ripe plum tomatoes, peeled, seeded and chopped.
1/4 cup black olives, pitted and chopped
1 Tbsp. basil
1 tsp fresh lemon juice
Pinch of sugar and a pinch of red pepper flakes, salt and pepper
Recipe
Pre-heat oven to 425 degrees. Lightly oil four pieces of foil about 13"x14". In a large skillet, heat oil over medium low heat. Add onion and garlic and cook until softened. Add tomatoes and cook, stirring occasionally until sauce has thickened. Stir in olives, basil, lemon juice, sugar and pepper flakes. Season with salt and pepper. Pat fish dry and place on foil. Sppon sauce over fish. Fold foil and bake packets for 15 minutes, or until fish is opaque in center.
