Basil Shrimp with Feta and Orzo

1/2 cup uncooked orzo
2 teaspoons olive oil, divided
1 cup fresh tomato, diced
3/4 cup scallions, washed, trimmed, and sliced
3/4 cup feta cheese, crumbled
1 teaspoon grated lemon peel
1 tablespoon fresh lemon juice
1/4 teaspoon salt
1/4 teaspoon coarsely ground black pepper
3/4 pound large shrimp, peeled and deveined
1/4 cup chopped fresh basil (dried basil won't work!)
Recipe
Preheat oven to 450 degrees F. Grease a large, lidded casserole dish.
Cook the orzo in boiling water for five minutes (do not salt!). Drain thoroughly and place in a mixing bowl. Stir in 1 teaspoon of oil and the next seven ingredients and combine thoroughly.
Combine the shrimp and the basil and arrange on top of the orzo. Place the lid on top of the casserole dish and bake for about 25 minutes, or until the shrimp are cooked through. Drizzle with the remaining teaspoon of olive oil and serve piping hot. Serves two.
