Broiled Lobster Tails and Pea Pods

4 8-ounce fresh or frozen lobster tails
1 Tbsp. butter, melted
¼ tsp. chili powder
2 Tbsp. butter
2 cloves garlic, minced
2 cups snow pea pods, trimmed
Salt and pepper
Recipe
Preheat broiler. Thaw lobster tails, if frozen. Butterfly the lobster tails by cutting lengthwise through the center of the hard top shells and meat with kitchen shears. Cut to, but not through, the bottom shell. Spread the halves of tails apart with fingers. Place lobster tails, meat side up, on the unheated rack of a broiler pan.
In a small bowl combine the 1 tablespoon melted butter and chili powder. Brush mixture over lobster meat.
Broil 4 inches from the heat for 10 to 12 minutes or until lobster meat is opaque. Cool slightly. Remove meat from shells. Halve the meat lengthwise, then slice crosswise into 2-inch pieces. Set aside.
In a large skillet heat the 2 tablespoons butter over medium heat. Add garlic; cook and stir for 1 minute. Add pea pods. Cook and stir for 2 minutes or until crisp-tender. Add lobster and heat through. Season to taste with salt and pepper. Makes 6 to 8 servings.
