Broiled Shrimp w/Lemon Garlic Butter

for two
12-14 medium to large shrimp
salt and fresh ground pepper
1 Tablesp olive oil
1 Tablesp lemon juice
1Tablesp dry white wine
1/2 Tablesp chopped fresh rosemary or 1 teasp dry
1/2 Tablesp finely minced garlic
3 Tablesp cold butter
1 Tablesp finely chopped chives
Recipe
1) Preheat stovetop grill or the broiler.
2) Using a sharp knife and starting at the back of the shell, cut the shrimp partly open,
butterfly-fashion. Sprinkle the cut portion with salt and pepper and brush with the oil. Turn the shrimp, cut side down.
3) Combine the lemon juice, wine, rosemary and garlic in a small saucepan. Cut the butter into 6 pieces. Bring the liquid to a boil and gradually add butter, stirring with a wire whisk. When all butter is added and melted, remove butter sauce from heat.
4) To broil , put shrimp 4 inches from heat. Cook about 1 minute and turn, cut side up. Broil another minute or so till done.
To grill on stovetop, get grill really hot, then put them cut side down on the grill. Cook about 45 seconds, then turn cut side up. Cook another 45-60 seconds and remove from grill.
5) Add chives to the hot butter. Arrange the shrimp on serving plates and spoon sauce over them.
NOTE: YOU CAN PUT THIS ON SKEWERS AND PUT THINGS INBETWEEN THE SHRIMPS, LIKE ONIONS, PEPPERS, CHERRY TOMATOES, ETC.
