Carolina Shrimp and Grits

List of Ingredients
6 ea. U-12 Head-On Shrimp
4 oz Sliced Andouille Sausage
1 oz Sliced Shallots
4 oz White Wine
12 oz Clam Juice
2 oz Unsalted Butter
1/2 oz Shaved Green Onions
1 oz Diced Tomatoes
4 oz *Cooked Grits
Grits:
2 C Whole Milk
3 T Butter
1/2 C Grits
3 T Salt
Method for Grits:
· Bring Milk, Salt and Butter to a boil.
· Add grits.
· Cook on low heat until desired consistency.
· In a sauté pan, sauté the shrimp.
· Add the shallots and andouille sausage.
· Cook until the shallots soften.
· Add the white wine and reduce by half.
· Add the clam juice and reduce by half.
· Add the butter and whisk into broth.
· Add the scallions and tomatoes.
· Place grits in center of bowl.
· Arrange shrimp around grits.
· Check seasoning and add salt and pepper to taste.
· Pour remaining ingredients over grits.
