    2 pounds catfish filets
    3 pounds potatoes, cut in 1/2-inch dice
    1 pound collards (or spinach, kale, or mustard greens), chopped in 1/2-inch strips
    Salt and pepper
    8 cloves garlic, sliced
    1/4 pound smoked ham, cut in slivers
    1 cup dry white wine
    1 /4 cup olive oil

    Recipe



    Heat oil in large Dutch oven. Toss garlic and greens in oil and cook 2-3 minutes until greens start to wilt. Toss in potatoes and ham; sprinkle with salt and pepper. Arrange fish on top of greens. Pour in wine and enough water to barely reach top of greens. Cover and simmer 35 minutes, shaking pan occasionally. Serve in soup plates.
