Easy Clam Fritters

1 1/2 cups sifted all-purpose flour
3 1/2 tsps. baking powder
two 11/2 ounce cans white clam sauce
1 egg
1 tsp. powdered ginger
1/2 tsp. freshly grated nutmeg
1/2 tsp. cayenne pepper
1 1/2 tbsp. sesame seeds
1 tbsp. chopped fresh parsley
freshly ground pepper to taste
salt, if desired
vegetable oil for frying
Recipe
Sift together the flour and baking powder. Drain the liquid from the clam sauce and reserve. Mix the clams with the flour and baking powder. Beat the egg, and add it to the flour mixture with the ginger, nutmeg, cayenne pepper, sesame seeds, parsley, pepper, salt if desired, and 1 cup of the reserved clam liquid. Heat the oil to 375 degrees. Using two teaspoons, plunge one into the batter and use the other spoon to push the batter into the hot oil. The fritters will puff up. Fry until fritters turn golden, approximately 2 minutes, and turn over. Cook 1 1/2 to 2 minutes more. Remove the fritters to paper towels to absorb the extra oil. Serve hot. Can be refrigerated for later use. To reheat, place the fritters in 350 degree oven for approximately 15 to 20 minutes, or in average microwave for 2 1/2 to 3 minutes on power 4.
Makes about 3 to 4 dozen fritters, depending on size.
