Garlic Shrimp and Pesto Toasts

12 slices party pumpernickel bread
1 Tbsp. butter
1 clove garlic, minced
12 medium shrimp, peeled and deveined (with tails intact, if desired)
Salt and pepper to taste
¼ cup purchased basil pesto, dried tomato pesto, or black olive spread
6 grape tomatoes, halved
1 Tbsp. finely shredded Parmesan cheese
Recipe
Preheat the broiler. Place pumpernickel slices on a baking sheet. Broil 4 to 5 inches from heat about 2 minutes per side or just until crisp.
In a medium skillet melt butter. Add garlic; cook over medium heat for 1 minute. Add shrimp; cook for 3 to 4 minutes or until opaque. Season with salt and pepper.
Spread pesto over toasted bread slices. Top each with a shrimp and a tomato half; sprinkle with Parmesan cheese. Broil for 1 to 2 minutes more or just until cheese starts to melt. Makes 12 appetizer servings.
