Grilled Red Snapper with Avocado Sauce

2 red snapper fillets
½ cup red wine
2 Tbs. melted butter, divided
1 tsp paprika
2 Tbs finely chopped onion
1 Tbs flour
¼ tsp seasoned salt
½ cup water
¼ cup sour cream
1 Tbs horseradish
1 small ripe avocado, peeled and diced
1 lemon, quartered
1 Tbs. minced fresh parsley
Combine the fillets and wine in a shallow dish. Marinate at least 1 hour: drain. Brush 1 tablespoon butter on both sides of the fillets. Sprinkle with paprika and grill 4 to 5 minutes or until done. While grilling, sauté the onions in the remaining butter in a medium skillet until tender. Whisk in the flour and salt. Add water slowly. Cook for one minute, stirring constantly. Remove the skillet from the heat. Stir in the sour cream, horseradish and avocado. Return skillet to low heat and warm until heated through. Spoon sauce over the fillets and sprinkle with lemon juice and parsley.
