Grilled Salmon With Citrus Ponzu Sauce

6-7 ounces of salmon fillet
¼ cup furikake (seasoned seaweed) optional
Teriyaki Sauce:
1 cup light soy sauce
¾ cup sugar
¼ cup green onion (chopped)
¼ cup grated fresh ginger
Ponzu Sauce:
1 cup mirin
1 cup sake
½ cup light soy sauce
Juice of 2 lemons, 1 lime, 1 orange
Chili flakes (optional)
Recipe
Combine all ingredients in a bowl for teriyaki marinade. Whisk sugar until dissolved. Place salmon fillet in marinade for no more than ten minutes. In a pot, first combine sake and mirin together and reduce by half, take off heat and let cool. Add soy and citrus juices after. Grill salmon to preferred temperature. This dish is great with carrots, daikon, pickle ginger, beets and julienne raw vegetables. Sprinkle seaweed on top.
