    1 Medium Leek, chopped
    10 oz of lobster meat
    2 tablespoons of Scotch Whisky
    6 fl oz double cream
    2 - 3 oz Cheddar Cheese, grated
    Butter
    Seasoning
    Chopped Parsley

    Recipe



    Butter a ramekin dish for each person.


    Melt 1 oz of butter in a pan and fry the chopped leek until soft.


    Add the lobster pieces and heat through.


    Add 2 tablespoons of Scotch Whisky and heat for two minutes.


    Stir in the cream, warming the mixture thoroughly, but not allowing it to boil.


    Remove from the heat and season to taste.


    Spoon into the ramekin dishes and sprinkle with grated cheese.


    Place under a hot grill until the cheese is melted and bubbling.


    Dust with finely chopped parsley and serve piping hot.
