Lobster Saute

List of Ingredients
1 1/4 pounds Lobster, steamed, cooled (meat picked from tail and claws)
lobster spiders
3 Red Bliss baby potatoes (steamed, cooled and set aside)
1 red pepper, fire roasted, peeled and sliced
1/2 ear Corn (off the cob) (roasted and cut from cob)
1/2 Cup leeks (cleaned and cut into rings)
1/4 Cup sherry
1 pint heavy cream
1 Tbsp butter
Sauce: In a heavy bottom sauce pan melt butter and lightly saute 1.4 Cup of the leeks, add sherry, bring to boil. Reduce heat and add cream and lobster spiders. Simmer cream sauce until reduced by half, then strain sauce and keep warm.
Saute: Heat medium saute pan and add rest of leeks, peppers, corn, potatoes. Then add cream sauce and lobster. Salt and pepper to taste, Garnish with chives.
