Mediterranean Grilled Swordfish Salad

List of Ingredients
1 swordfish
1 tbsp. salt and pepper
3 c. Mediterranean Salad Mix
¼c. roma tomato
¼c. Kalamata olives
¼c. red onions
¼c. feta cheese
¼c. roasted red peppers
2 oz. Kalamata olive vinaigrette
1 tsp. oregano
1 tsp. parsley
3 each lemon wedges
¼c. namasu Recipe
1. Season with salt and pepper mix and grill swordfish per order.
2. In a stainless steal bowl, combine 3 c. of Mediterannian lettuce mix with
Kalamata olives, julienne red onions, crumble feta cheese and dice
roma tomatoes and tossed with olive lemon vinaigrette.
3. When ingredients are fully tossed add fine chopped fresh oregano and
tossed several times until fully incorporated to the mix.
4. Place the salad in a high mound in the center of a large dinner plate.
5. Place the lemon wedges at 10, 2, and 6 o'clock.
6. When fish is finished, place the fish on the top of the salad.
7. Finish the salad with ¼c. of the namasu in a distinct mound on top of the
swordfish.
