    1 Bottle of Beer
    4 Garlic Cloves
    1 Onion, Coarsely Chopped
    2 Bay Leaves
    1/2 of a Teaspoon of Dried Red Pepper Flakes
    1 Tablespoon of Whole Black Peppercorns
    2 Tablespoons of Assorted Chopped Fresh Herbs
    2 Tablespoons of Fresh Lemon Juice
    4 Pounds of Cleaned Mussels
    4 Tablespoons of Butter

    In a large pot with a tight-fitting lid, mix the beer with the garlic, onion, spices, herbs and lemon juice. Bring to a boil, add the mussels, and cover tightly. After 5 minutes, check the mussels. They should all be completely open and cooked through. In not, cover, and cook 1 to 2 minutes more. Discard any unopened mussels.
