Newburg Styled Crab

List of Ingredients
1 tablespoon of butter or margarine
1 tablespoon cornstarch
1 1/4 cups of skim milk
2 beaten egg yolks
1 6-ounce package of frozen crab meat, thawed
1/2 of a 10-ounce package frozen peas, cooked and drained
3 tablespoons of dry white wine
2 teaspoons of lemon juice
6 whole wheat crackers
Melt butter and stir in cornstarch and 1/4 teaspoon salt. Add milk all at once and cook and stir until bubbly. Cook and stir 2 minutes more. Stir half of the hot mixture into the egg yolks. Return to hot mixture in saucepan. Cook and stir until bubbly. Add crab and peas, and heat through. Stir in wine and lemon juice. Serve over whole wheat crackers.
