    1 can pink salmon (14 oz) with liquid, all bones removed
    1/2 cup of crushed Ritz crackers
    1 egg, beaten
    1/2 cup finely chopped onion
    1 tbsp of chopped red pepper
    1 tbsp of chopped green pepper
    Tony Chacher's Cajun Seasoning or salt & pepper to taste
    1 cup of Zatarains Fish Fry, or your local brand of Fish Fry

    Mix all ingredients well, except for the fish fry. Shape into 2-inch diameter patties and coat both sides evenly with fish fry. Cook patties until they are a crisp, golden-brown on both sides. Great when topped with fresh lemon juice. Delicious for breakfast or dinner.

    Makes 8-10 salmon cakes
