Salmon with a Mustard Cream Sauce

sheet of puff pastry
1 egg white
4 fillets of salmon
1 large carrot
8 sticks of asparagus
1/2 cup cream
2 tablespoons of Wholegrain Seeded Mustard
Instructions:
Cut the pastry sheet into four squares and coat top with egg white. Place in oven on flat tray and bake until just golden at 230 degrees. While pastry is cooking, place salmon in a greased pan and sear on both sides for approximately 3 minutes. Stir fry the carrot and asparagus. Mix the cream with the mustard and gently warm. Place the pastry sheets on to individual plates, top with the carrot and asparagus, then place the salmon on top and pour the sauce across. Mashed potatoes are a good side dish for this recipe.
