    1 c. chopped onion
    2 c. chopped celery
    2 T. butter
    1/2 lb. fresh crabmeat, shredded
    1 lb. prawns, cooked and cut up
    2 1/2 c. rice, cooked
    1/2 c. water chesnuts, sliced
    1 c. mayonnaise
    3 T. lemon juice
    1/2 t. salt to taste
    1 c. Monterey Jack cheese, grated
    1 c. fine seasoned bread crumbs

    Saute onions and celery in butter until tender. Combine with crab, prawns, rice, water chesnuts, mayonnaise, lemon juice and salt. pour into buttered 9x13 inch baking dish. Seafood Supreme is tastier if it is refrigerated at this point for 24 hours. It can, however, be finished and baked immediately. Sprinkle with bread crumbs and cheese. Bake at 350 for 25 to 30 min. Remove from oven and let stand for about 10 min. before serving.
