    Sesame Bay Scallops and Snow Peas

    1 1/2 pounds bay scallops (large sea scallops can be substituted, if cut up)
    8 ounces snow peas
    1 carrot, julienned
    2 Tbsp. sesame oil
    1 tsp. dried ground coriander
    2 Tbsp. sesame seeds

    GARNISHES
    1 bunch watercress
    2 lemons, sliced thin

    Recipe



    Quickly saute scallops, snow peas, and carrot in hot oil for 3 to 4 minutes. Remove from heat and toss with coriander and sesame seeds. Cover and refrigerate until chilled. When serving, divide watercress onto each plate, arrange scallop mixture, and add a few lemon slices to one side of the plate for garnish.

    Serves 6 to 8
