    Southwestern Oven Poached Fish

    1 teaspoon of olive oil
    4 white fish fillets, such as flounder or perch, 3/4 to 1 pound
    1/2 cup of dry white wine
    1/4 teaspoon of ground white pepper
    1/2 teaspoon of New Mexico red chili powder, or your own choice
    1 tablespoon of minced fresh parsley
    Garnish: Sprigs of parsley, slices of lemon

    Preheat your oven to 400ºF. Lightly spread the oil on the bottom of a shallow baking dish and lay the fillets on it. Mix together the wine, pepper, chile powder, and parsley, pour over the fish and bake in a 400º oven for 12 to 15 minutes or until the fish flakes easily when tested with a fork. Carefully lift the fish out of the poaching liquid, place on a platter or serving plates, garnish with parsley and lemon, serve. Serves 4
