    Spicy Shrimp with Red Pepper Sauce

    Shrimp:
    Begin by thickly slicing French bread or baguette. Mix together olive oil, garlic and Parmesan cheese and brush the mixture over the bread. Place bread on the grill and toast until done.

    In a hot sauté pan throw 6-8 large shrimp in with olive oil. Add in 1 Tablespoon red pepper flakes, 1 Tablespoon dried oregano and 2 Tablespoons of diced onion. Sauté the mixture until the shrimp are pink.

    Add in 3 oz. white wine to deglaze the pan and then add in 1/2 cup of diced tomatoes and a 1/2 cup of corn and black bean mixture. Add in salt and pepper and 1 oz. chiffonade spinach. Take the mixture and place on top of the toast.

    Sauce:
    Puree one cup of roasted red peppers in a food processor. Add in three cloves of garlic, 2 Tablespoons fresh chopped cilantro and 1 Teaspoon of Sarachi sauce. Slowly drizzle one cup of olive oil in the mixture until blended.
