    Tilapia with Brandy-Lemon Glaze

    4 tilapia fillets
    1/2 cup butter, divided
    1 cup fine, dried bread crumbs

    Brandy-Lemon Glaze:
    2 tablespoons butter
    2 tablespoons brown sugar
    1/4 cup brandy
    1/4 cup lemon juice

    fresh parsley sprigs

    Melt 1/4 cup butter in a small skillet over low heat. Remove the pan from the heat and dip the fish fillets into the butter to coat both sides. Dip the fillets into the bread crumbs to coat; shake off excess.

    Heat 1/4 cup of butter in a large skillet over medium heat. When hot, add the fillets and fry until lightly browned, about 2 to 3 minutes each side. Remove the fillets from the pan and keep warm. Reserve the pan drippings.

    Brandy-Lemon Glaze: Add 2 tablespoons of butter to the pan drippings over medium heat. Stir in the brown sugar, brandy and lemon juice. Cook, stirring constantly until the sugar dissolves and the mixture begins to caramelize and thicken slightly, about 3 minutes.

    To serve, pour the glaze over the fish fillets and garnish with fresh parsley sprigs. Serves 4.
