    Pasta (Ziti or Penne)
    Extra Virgin Olive Oil
    1/2 Pound Chopped Meat (Pork & Beef)
    Tomatoes
    1/2 White Onion
    Sicilian Sea Salt & Pepper to Taste

    Boil the full pot of water for your pasta.

    In another pot heat some olive oil and add in the chopped onions. After a few minutes add in your thinly sliced garlic. Break apart your chopped meat as best you can and add it to the pot. Allow it to brown and stir, breaking it apart with a wooden spoon. Once it is browned, add in a cup of red or white wine (I prefer red for this). Continue to stir/cook. Once the wine is cooked out and the meat sauce starts to get thicker, add in your tomatoes. Bring to a boil and reduce to a simmer, add your basil, bay leaf and oregano to taste.

    Once your water comes to a boil, add in the ziti or penne to cook. Cook until al dente (firm but not hard). Get your glass pyrex dish ready and preheat your oven to 350F. Coat the bottom of your glass oven dish with the meat sauce. Drain your pasta well and put it into the dish. Add the sauce over the top of the pasta to cover it and add a nice amount of grated cheese, and your thinly sliced mozzarella cheese over the top. Cook for 15-20 minutes. Remove from the oven when the mozzarella is fully melted, and allow to sit for at least 15-20 minutes.
