    1/2 ounce cake yeast
    4 tbsp. water
    3 1/2 cups unbleached flour
    2 tsp. sea salt
    1 tbsp. olive oil
    1 cup carbonated water

    Break yeast into water. Let dissolve 5 minutes. Mix flour and salt into large bowl. Make well in center and pour in yeast mixture, oil, and 2/3 cup carbonated water. Mix in the flour, stir in remaining carbonated water to form a moist, firm dough. On a lightly floured work surface, Knead for about ten minutes until shiny and smooth. Let dough rise in a covered bowl. appr. 1 1/2 hours. Punch down and let rest for 10 minutes. divide dough into eight equal pieces. roll out each piece into a 6 in. round. If the dough fights back let rest a couple minutes. Over medium low heat heat heavy frying pan until very hot. Place a round in hot pan, dock the dough (prick with fork all over to prevent air bubbles. cook until golden on both sides, flipping often. appr. 5 minutes. Repeat until all rounds are cooked. Stack rounds and cover with towel to keep nice and soft. This is great for panini or dipped into bagna cauda. Enjoy!
