    1 lb. Penne
    5 Medium Roma Tomatoes
    10 oz Hard Mozzarella
    10 Large Basil Leaves
    1 cup Extra Virgin Olive Oil
    ¾ cup Grated Parmesan Cheese

    Recipe



    Dice the tomatoes about ½ inch thick. Cut the mozzarella in the same way. Slice the basil leaves very thinly.

    In a large bowl mix well all the ingredients with salt and pepper and put aside at room temperature.

    Cook the pasta in a pot with an abundant amount of salted boiling water. Strain it and add the sauce in the large bowl. Mix well, add some hot water from the pasta pot if needed. Serve warm.

    Serves 6.
