    2 jars drained marinated peppers
    1 small cubed yellow onion
    1/2 jar whole peeled tomatoes
    1 jar grilled mushrooms
    1 teaspoon chopped garlic
    2 tablespoons extra virgin olive oil
    1 tablespoon capers
    3 tablespoons balsamic vinegar
    salt and black pepper to taste

    Over high heat, preheat a large skillet. Place the oil, capers and the onions in and saute for 3 to 4 minutes or until the onion is translucent. Add the peppers, garlic and the mushrooms and let saute 2 to 3 minutes. Add the tomatoes and break apart using your mixing utensil. Add the balsamic syrup and mix well. Bring heat to medium low and let simmer 5 to 7 minutes. Remove from heat and place in a serving bowl, let cool down to room temperature and serve. Serves 4 to 6 people Refrigerate leftovers for up to 4 days.
