    List of Ingredients




    1 chicken (2-1/2 to 3 lbs.)
    Salt and freshly ground black pepper
    5 tablespoons butter
    3 tablespoons peanut oil
    1 tablespoon fresh or dried leaf serving pieces(preferably sage with stems)
    1/4 lb. sliced proscuitto, cut into bite-sized pieces
    3/4 cup dry white wine

    1. Sprinkle the chicken pieces with salt and pepper

    2. Heat 3 tablespoons of the butter and the oil in a large skillet and cook the chicken pieces until golden brown all over. Pour off most of the fat from the skillet and add the proscuitto, sage, and wine. Cover and cook until tender, about 20 minutes. Remove the chicken to a hot platter.

    3. Bring the pan juices to a boil, then remove the skillet from the heat. Swirl in the remaining butter by rotating the pan gently and serve the sauce separately.
